Today, I became a victim to the biggest impulse shopping “decision”.
Today, I walked into Costco to buy socks…really, JUST socks!
Today, I walked out of Costco with socks AND my very own Blendtec blender!
I have been wanting this bad boy for many many moons. I have been using the kind of blender that you have to stick a stick into in order to mix up all the ingredients every 5 seconds. The kind that shakes the entire kitchen counter. The kind that makes you blend your food in two batches because it can’t handle much and the kind that leaves ice chunks…yes, ice chunks!
R.I.P. old blender. You were good to us. I honestly got a little sad taking it off the counter. Dont worry, my sadness was short lived.

In honor of my new purchase, I thought it would be appropriate to blend their signature “Tortilla Soup” for my very first blend. Yes, the kind they demo at Costco. That you have probably sampled and loved.
The recipe is super easy, clean, green and vegetarian. You obviously dont have to have a Blendtec to make it. It will work just fine in any blender…you just might have to get out the stick. Teehee!
Tortilla Soup Recipe:
-2 cups of water (less if you want thicker soup)
-2 Roma tomatoes
-1”/2.5 cm slice red pepper (I used ¼ of a red bell pepper)
-1/4 avocado (I used half because I have an obsession with avocado)
-1 onion wedge
-2 sprigs fresh cilantro
-1 tsp herb seasoning
-3/4 teaspoon salt
-3/4 teaspoon garlic powder
-Pepper jack cheese to your liking
Heat over your stove top and serve! YUMM!
If you want some additional umph to your soup, I would suggest PULSING in black beans at the very end. For some added crunch, you can toast a tortilla crumble it on top of your soup.
